How to Make NYC Mini Egg Cookies
Step 1: Preheat the Oven
Preheat your oven to 180C/160C (fan)/350F and line a large baking tray with non-stick baking paper, unless you’re using a non-stick cookie sheet.
Step 2: Cream the Butter and Sugars
In a large mixing bowl, cream together the butter, light brown sugar, and granulated sugar using an electric hand whisk until pale and fluffy.
This step is essential as it helps aerate the dough and gives the cookies their signature chewy texture.
Step 3: Add the Egg and Vanilla
Add in the egg and vanilla extract and mix again until fully combined.
Make sure the egg is at room temperature so it incorporates smoothly and evenly into the mixture.
Step 4: Add the Dry Ingredients
