Ingredients for Nutella White Chocolate Shortbread Cookies
For the Shortbread cookies:
- 55 g salted butter, softened (2 oz)
- 30 g granulated sugar (2 tbsp)
- 85 g plain (all-purpose) flour (generous ⅔ cup, plus extra for dusting)
For the Topping:
- 60 g Nutella or any chocolate spread (3 tbsp)
- 50 g white chocolate, melted (1.75 oz)
How to Make Nutella White Chocolate Shortbread Cookies
Step 1: Make the Shortbread Dough
Combine the softened butter, sugar, and flour in a mixing bowl. Rub the ingredients together with your fingertips until the mixture is crumbly and fully combined.
Step 2: Roll Out the Dough
Lightly flour your surface and rolling pin, then roll out the dough to about 5 mm (¼ in) thick. If the dough becomes too sticky, sprinkle more flour over it and on your rolling pin.
Step 3: Preheat the Air Fryer
Set your air fryer to 150˚C (300˚F) or preheat your oven to 170C/(150C fan) while you cut out the cookies.
Step 4: Cut Out the Cookies
Use a round cookie cutter (9 cm/3.5 in) to cut as many cookies as possible. Re-roll the dough to cut out more cookies if needed. You should get around 5–6 cookies. Feel free to double this recipe if you want to make more.
Step 5: Bake the Cookies
Place a sheet of thick baking paper in your air fryer. Arrange the cookies on top, leaving a 2 cm (¾ in) gap between them. Depending on the size of your air fryer, you may need to bake them in batches. Air fry for 7–9 minutes, or until the cookies are lightly golden.
Alternatively, place the cookies on a cookie sheet and bake in the oven for 10-12 minutes.
Step 6: Cool the Cookies
Remove the cookies from the air fryer and allow them to cool completely before adding the toppings.
Step 7: Add the Chocolate Toppings
Spread ½ tbsp of Nutella onto each cooled cookie, smoothing it out almost to the edges. Next, dollop 1–2 tsp of melted white chocolate on top and spread it out gently over the Nutella layer.
Step 8: Let the Toppings Set
Leave the cookies at room temperature to set, or refrigerate them for 30 minutes to speed up the process.
Step 9: Serve and Store
Store the cookies in an airtight container at room temperature for up to 3 days. Enjoy them to yourself or share them with friends and family.
Why These Cookies Are Perfect for Any Occasion
These Nutella white chocolate shortbread cookies are versatile enough for any occasion. Whether you’re hosting a party, looking for a gift idea, or enjoying yourself, they’ll always be a hit.
Their buttery base and chocolate topping make them indulgent, yet they’re easy enough to whip up in less than 30 minutes.
Tips for the Best Nutella White Chocolate Shortbread Cookies
- Keep the Dough Cool: If the dough becomes too soft, refrigerate it for 10–15 minutes before rolling it out.
- Don’t Overbake: Keep an eye on the cookies as they bake. Overbaking will make them hard rather than soft and buttery.
- Flour Your Tools: Lightly flour your rolling pin and cookie cutter to prevent sticking.
- Store Properly: Use an airtight container to keep the cookies fresh and maintain their texture.
Serving Suggestions
These cookies are delicious on their own, but you can elevate them with a few creative ideas:
- With Coffee or Tea: Perfect for a cozy afternoon treat.
