Equipment You’ll Need

Before diving into the recipe, ensure you have the following tools on hand:

  • 8-inch springform tin – Perfect for shaping and easy removal.
  • Mixing bowls – One large for the cookie dough and another for the buttercream icing.
  • Hand whisk or electric mixer – To cream the butter and sugar and whip up the buttercream.
  • Spoons – For spreading the Nutella and smoothing out the cookie dough.
  • Piping bag and star tip – To pipe the buttercream swirl for a festive finish.

Ingredients for the Christmas Cookie Pie

For the Cookie Dough:

  • 200 g unsalted butter, softened (⅞ cup unsalted butter)
  • 250 g light brown sugar (1 ¼ cups packed light brown sugar)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 320 g plain flour (2 ½ cups all-purpose flour)
  • ½ tsp bicarbonate of soda (½ tsp baking soda)
  • 150 g chocolate chips + extra for topping (1 cup chocolate chips + extra for the top)
  • 50 g red & green M&M’s + extra for topping (¼ cup red & green M&M’s + extra for the top)
  • 300–400 g Nutella or thick spread of your choice (1 ¼–1 ¾ cups Nutella or similar spread)

For the Buttercream Icing:

  • 100 g unsalted butter, softened (⅞ cup unsalted butter)
  • 200 g icing sugar (1 ⅔ cups powdered sugar)
  • 1 tsp vanilla extract
  • 1–2 tbsp milk, if needed
  • Green food coloring (as desired)
  • Festive sprinkles (for decoration)

How to Make the Christmas Cookie Pie

Step 1: Prepare the Tin and Preheat the Oven

Line an 8-inch springform tin with parchment paper and preheat your oven to 180°C (160°C fan)/350°F.

Step 2: Make the Cookie Dough

  1. In a large bowl, cream together the softened butter and light brown sugar with an electric hand mixer until light and fluffy.
  2. Add the egg and vanilla extract, mixing with a spatula until well combined – don’t worry if it looks a bit lumpy here.
  3. Add in the plain flour and bicarbonate of soda, and fold these in until it comes together to form a dough.
  4. Fold in the chocolate chips and red & green M&M’s for a festive touch.

Step 3: Assemble the Cookie Pie

  1. Separate off one third of the cookie dough, then press the two thirds into the base of the prepared tin, ensuring it’s evenly spread, and create a lip around the edge.
  2. Spread the Nutella or your chosen spread over the dough, leaving a small border around the top of the edge.
  3. Place the remaining cookie dough over the top. I find it easiest to press the dough into a disc shape, then seal the edges together. Sprinkle extra chocolate chips and M&M’s on top for decoration.

Step 4: Bake the Cookie Pie

Bake in the preheated oven for 25 minutes, or until the top is golden brown and slightly crisp. Allow the cookie pie to cool completely in the tin before decorating.

Step 5: Make the Buttercream and Decorate

  1. In a large mixing bowl, beat the softened butter until creamy. Gradually add the icing sugar and mix well.
  2. Add the vanilla extract and a splash of milk if the icing needs loosening. Mix in the green food coloring until the desired shade is achieved.
  3. Transfer the buttercream to a piping bag fitted with a star tip.

Step 6: Serve and Enjoy!

  1. Carefully remove the cookie pie from the tin.
  2. Pipe a festive swirl around the edge of the cookie pie and decorate with holiday sprinkles and more red and green M&M’s if you wish.
  3. Slice into 16 or more portions, and serve with cream or ice cream for the ultimate Christmas dessert.
