You can also swap the Nutella for Biscoff, peanut butter, or any other spread you like, customising them to your taste.

Equipment You’ll Need

To make these Nutella-stuffed cookie sandwiches, you’ll need:

  • Mixing bowl – To combine the cookie dough ingredients.
  • Baking tray – To bake the cookies evenly.
  • Parchment paper – To prevent sticking.
  • Teaspoon or piping bag – For spreading or piping the Nutella filling.

Why This Recipe Works So Well

  • Only 5 Ingredients: Simple and easy with pantry staples.
  • Soft and Buttery: The shortbread-like texture makes them melt in your mouth.
  • Nutella Centre: A rich, gooey filling that takes these cookies to the next level.
  • Quick to Make: No chilling required—just mix, bake, and assemble.

Ingredients for Nutella Stuffed Chocolate Chip Cookie Sandwiches

  • 110g (½ cup) salted butter, softened
  • 55g (¼ cup) granulated sugar
  • 160g (1 ¼ cups) plain flour (all-purpose flour)
  • 80g (½ cup) chocolate chips
  • 50g (3 tbsp) Nutella (or spread of your choice)

This recipe makes around 20 mini cookies, or 10 sandwich cookies.

How to Make Nutella Stuffed Chocolate Chip Cookie Sandwiches

Step 1: Preheat the Oven

Preheat your oven to 180°C (160°C fan) / 350°F. Line a baking tray with parchment paper.

Step 2: Make the Cookie Dough

In a large mixing bowl, mix together the softened butter, granulated sugar and flour until it comes together and is nice and crumbly. I like to start with a spoon until the butter is coated, then combine it with my hands.

The dough should be soft but not sticky. If the dough is too sticky, it likely means it’s too warm, you can pop it in the fridge for 10 minutes to cool it down.

Fold in the chocolate chips until evenly distributed.

Step 3: Shape the Cookies

Roll the dough into small balls (about 2cm each) then shape them into a flat disc about 0.5cm thick and place them on the lined baking tray.

Step 4: Bake the Cookies

Bake in the preheated oven for 10 minutes. Alternatively, bake them in the Air Fryer at 150C for 6-7 minutes. The cookies should be lightly golden but still soft—don’t overbake, or they will become too crunchy.

Step 5: Cool the Cookies

Let the cookies cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.

Step 6: Add the Nutella Filling

Once the cookies are completely cool, spread or pipe a small amount of Nutella onto the bottom of one cookie.

Gently press another cookie on top to form a sandwich, ensuring the filling spreads evenly.

Repeat until all cookies are paired and filled.

Why This Recipe is Perfect for Any Occasion

These Nutella-stuffed cookie sandwiches are perfect for snacking, sharing, or making ahead for special occasions.

They’re small, bite-sized, and filled with rich chocolate, making them great for coffee breaks, lunchboxes, or quick desserts.

Since they’re made with just 5 ingredients, they’re quick, simple, and easy for beginner bakers.

Tips for the Best Cookie Sandwiches

  • Use Softened Butter: This helps create a smooth, even dough.
  • Don’t Overbake: The cookies should be soft when they come out of the oven, as they firm up as they cool.
  • Cool Before Filling: If the cookies are too warm, the Nutella will melt and run out.
  • Use a Piping Bag for Neat Filling: This gives you an even Nutella layer without mess.
  • Experiment with Fillings: Try Biscoff, peanut butter, or white chocolate spread for different flavours.

Storage Tips

  • Store in an airtight container at room temperature for up to 4 days.
  • Freeze unfilled cookies for up to 1 month—just defrost and add Nutella before serving.
