  • 60g cornflakes (about 2 cups)
  • 120ml Caesar dressing (½ cup)
  • 2 handfuls of iceberg or sweet gem lettuce, chopped
  • 2 long rolls, ideally brioche

  • Black pepper, to taste
  • 1 tsp paprika

Optional Garnish

  • Freshly grated Parmesan cheese

Step-by-Step Instructions

Step 1: Preheat the Oven (If Using)

If you’re cooking the chicken in the oven, preheat it to 220°C (200°C fan) / 425°F.

Line a baking tray with foil or baking paper and set it aside.

If you’re using an air fryer, no preheating is usually necessary, although you can preheat it if your model recommends it.

Step 2: Tenderise the Chicken

Place each chicken breast between two sheets of baking paper or parchment paper.

Using a meat mallet or rolling pin, gently flatten the chicken to an even thickness.

This helps the chicken cook more evenly and improves the overall texture.

Season both sides generously with salt, black pepper, and paprika.

Step 3: Prepare the Egg Wash

Crack the egg into a medium bowl.

Beat thoroughly until the yolk and white are completely combined.

Set aside for coating the chicken.

Step 4: Crush the Cornflakes

Add the cornflakes to a food processor.

Pulse until they are roughly crushed but still have some texture.

Alternatively, place them into a strong food bag and crush them using a rolling pin.

Transfer the crushed cornflakes to a shallow bowl.

Step 5: Coat the Chicken

Dip each chicken breast into the beaten egg.

Allow any excess egg to drip off before transferring it to the crushed cornflakes.

Press the cornflakes firmly onto both sides of the chicken.

Don’t rush this step.

Step 6: Cook the Chicken

Place the coated chicken breasts onto your prepared baking tray or into the air fryer basket.

Make sure they aren’t touching.

For the air fryer, cook at 180°C (350°F) for 12–14 minutes.

For the oven, bake at 220°C (200°C fan) / 425°F for 20–22 minutes.

The chicken is ready when it reaches an internal temperature of 75°C (165°F).

Step 7: Toast the Rolls

While the chicken cooks, slice the rolls in half.

Place them cut-side down in a dry frying pan over medium-high heat.

Toast until lightly golden.

This only takes a few minutes but makes a huge difference to the finished sandwich.

Step 8: Prepare the Caesar Salad

Spread a little Caesar dressing onto the bottom half of each toasted roll.

Place the remaining Caesar dressing into a bowl.

Add the chopped iceberg lettuce and toss until evenly coated.

The lettuce should be lightly dressed rather than swimming in sauce.

Step 9: Assemble the Sandwiches

Place the crispy cooked chicken onto the bottom half of each roll.

Top generously with the Caesar-coated lettuce.

If using Parmesan, sprinkle it over the lettuce for extra flavour.

Finally, place the top half of the roll on top.

Serve immediately while the chicken is still hot and crispy.
