
You guys always ask me what my favourite recipe is…
Now, it’s never gonna be a straight answer because it’s always going to depend on what mood I’m in at the time…
Do I want something fruity, do I want something chocolatey, do I want hot, cold, creamy, light, the list goes on.
But… THIS cake right here, will always be listed in my top favourite cakes of all time!
Even my fiance, who isn’t normally a huge fan of apple-based desserts, also rates this as one of his favourite cakes ever.
It literally has everything I could want in a cake. It’s absolutely packed with juicy apples, it has a buttery cinnamon sugar swirl throughout, it has a crisp top, with a sweet glaze, almost like a doughnut glaze! It’s light and fluffy, but also incredibly moist.
The way the glaze seeps through the cracks into the cake whilst it’s still warm… omg. I struggled to even take photos f this thing without devouring every piece I touched!

Cinnamon Apple Cake
Ingredients
For the apples
- 45 g granulated sugar
- 1 tsp cinnamon
- 2 apples peeled & diced
For the cinnamon swirl
- 150 g light brown sugar
- 2 tbsp cinnamon
- 120 g unsalted butter melted
For the cake
- 360 g plain flour
- 200 g caster sugar
- 4 tsp baking powder
- 300 ml whole milk
- 1 tsp vanilla extract
- 2 large eggs lightly beaten, room temperature
- 110 g unsalted butter melted & cooled slightly
For the glaze
- 200 g icing sugar
- 40 ml whole milk
Instructions
- Preheat the oven to 180C (160C fan) and line an 8x10" baking tray with non-stick baking paper
For the apples
- Peel and dice your apples, then whisk together the sugar and cinnamon in a small bowl. Coat the apples in the mix, then set aside
For the cinnamon swirl
- In a small bowl, whisk together the sugar, cinnamon, and melted butter with a spoon until fully combined, then set aside
For the cake
- In a large mixing bowl, add the flour, sugar, and baking powder, then whisk together with a hand whisk unhtil combined
- Pour in the milk, vanilla extract, and eggs and whisk until just combined, then gently stir in the butter with a wooden spoon or rubber spatula
- Fold in your apples, then pour the batter into your prepared tin, spreading it out to the edges
- Dollop on the cinnamon mixture (it may need a quick stir if it's separated), then swirl it through the batter with a knife. It should sit on top of the batter, rather than sink to the bottom
- Bake for 40-45 minutes until a toothpick inserted into the cake comes out mostly clean, with just a few crumbs on it. The cinnamon swirl part should still be wet and gooey whilst it's hot
For the glaze
- Whilst the cake is baking, make the glaze. Mix together the icing sugar and milk with a spoon until runny and smooth.
- Pour the glaze over the warm cake and spread it out evenly, letting it drip down any cracks in the cake (this is the best part to eat!)
- Let it cool in the tin for around 45 minutes, then slice into 16-20 pieces and enjoy warm or cold
- Enjoy!
Notes
- Store in an airtight container for up to 3 days
- When testing if the cake is done, make sure to test the cake only, as the apples and cinnamon swirl will still be wet and gooey
- You can also make the glaze with water rather than milk if you prefer, you may just want to use slightly less to achieve the same consistency










This is absolutely wonderful! I’ve made several different apple cakes and coffee cakes over the years, but If you’ll excuse the expression, this one takes the cake! Lots of apples, flavor and CINNAMON! For those of us in the US, if you don’t have a scale that measures in both grams and ounces, just ask your favorite AI to convert them. I don’t have an 8×10 baking pan, so used an 8″ square and added about 15 mins to the baking time. And I think I’ll add pecans next time, they seem like a natural fit. Thanks for a great recipe!

Super easy and less things to wash if you measure it with a kitchen scale! Highly recommend, and they’re not expensive. Mine was $15 I believe.

Easy recipe for such a decadent crowd pleaser! I will definitely make again. I must say it is utterly alarming how many people commenting are unable to google “120 g to cups.” Not everyone lives in the states and I say this as an American. Thanks for sharing!
I saw this recipe of Pinterest and thought I would try it. I had some apples that were slightly bruised and had seen better days, but we’re perfect for baking with. So far it looks really good. I’m not used to measuring with a scale in grams. I’m Canadian, and although we do use the metric system, for baking most people still use imperial. I have a digital scale because my I have all my grandmothers Portuguese recipes which are in metric as well. It’s still in the oven so I’m hoping it’ll turn out. All of your recipes look delicious. Looking forward to trying more.

Here’s the conversion of your recipe ingredients into cups and ounces:
### For the Cinnamon Swirl

I love the scale measurements-I try to use a scale for baking. I did not know what your pan was, but used a 10 X 7 ceramic pan I had. I only buy honeycrisp here in the states. They were perfect.
This is a keeper.
Really like the look of this cake and seems so easy without the need of a mixer – was wondering if anyone tried to make it as “muffins” individual cupcakes rather than a large one!

Made this cake today and followed recipe exactly. It came out precisely as the picture. It was/ is a very nice moist cake. My family loved it and say I have to make another one tomorrow. It is very sweet though so next time I might omit the sugar on the apples, a bit less in the cake etc. but that’s just my taste. This cake is very very good, light, moist, crunchy on top, apple and cinnamon! What more do you need… oh and the glaze, definitely don’t miss out on that step! Thanks very much for sharing.
Cake turned out REALLY well, thank you! But it really is on a VERY sweet side… and I’ve only put half the sugar in the cake mix 🫣 next time I’ll make way less cinema paste to put inside and skip some sugar 😍

Delish! Not a big fan of baked fruit, but it rocked! Great way to use up old apples. Added a handful or so of toasted almonds to the swirl – glorious!
Green or Red apple ?
Excellent. I used royal gala apples. I added a 1/2 cup of chopped walnuts and we liked the added texture. Thanks for using grams as I usually have to convert the measurements in recipes.
This was very nice but I think the cooking time given is too long – mine was cooked through after 30 minutes and if it had been left any longer it would have been overdone. So do check yours earlier than the time stated in the recipe.

Great recipe – lovely and moist and light with loads of cinnamon reminiscent of great German breads etc. I used 2 large cooking apples which balanced well with cake and didn’t bother with the icing as already sweet enough.

Extremely tasty and delicious! Terrific cake density and the glaze really makes it special. Made this for my book club meeting and it was an instant hit.
Shared this around my friends and they all loved it! It is deliciously buttery with a lovely cinnamon flavour and so soft and moist. I added a good glug of vanilla to the icing and I sprinkled chopped pecans over the top. It was amazing eaten warm and if by some miracle it lasts longer than a day it does keep really well.

Made it last night, my new favorite apple recipe. I did increase the apples-added 4 and it was perfect and moist.

My daughter made these today as cupcakes. It made 14 and they are amazing! You only need half the swirl and half the glaze mix though when doing them this way. And only 20mins in the oven. Delilah!

I have never rated a recipe before, but this is worth the time to write one. I followed the recipe as stated, and I have to admit the cinnamon swirl mixture did sink a lot, however this did not take away from the flavour of the cake. It was absolutely delicious, I was worried incase the 2 tbsp of cinnamon might be too much, but it is perfect. It is yummy, moist, sticky and very, very tasty. I will be making again, especially when I’m expecting visitors. Try it, you won’t be disappointed.
Can you make this as a loaf cake?
Yes sally I tried and it turned out great! Just make sure the measurements are right, I ended up using two loaf tins :)

This cake was INCREDIBLE. It is like the gooey, soft middle of a cinnamon roll with tart apple pieces in it for a burst of fall flavor. It was so moist and filled with cinnamon swirl. The glaze was the perfect addition to make it even more cinnamon roll like. This was so easy, I’d definitely make it again. I didn’t have an 8×10 pan, so I baked it in an 8×8 and baked the extra batter in a smaller pan. I do wish the recipe would specify the amount of apples needed in weight, as apple size can vary so much, but it want a huge deal. Served with some vanilla ice cream, this cake was a hit with the whole family!
