How to Make Chocolate Stuffed Brioche French Toast
Step 1: Cut and Stuff the Brioche
Take a thick slice of brioche bread and carefully cut a slit in the side into the middle to create a pocket. Be careful not to cut all the way through.
Stuff one or two squares of chocolate inside the pocket, ensuring it’s evenly placed so it melts properly.
Step 2: Prepare the Egg Mixture
In a mixing bowl, whisk together the egg, milk, vanilla extract, and ground cinnamon until smooth.
Step 3: Soak the Brioche
Dip the stuffed brioche slice into the egg mixture, coating both sides evenly. Let it soak for about 10-20 seconds per side so it absorbs the flavour without becoming too soggy.
Step 4: Cook the French Toast
Heat a non-stick frying pan over medium heat and add a little butter.
Place the soaked brioche into the pan and cook for 2–3 minutes on each side or until golden brown and crisp. Be gentle when flipping to keep the chocolate inside. If you want it cooked through slightly more, continue to cook it on a low heat for a few more minutes on each side.
Step 5: Coat in Cinnamon Sugar
While the French toast is still warm, mix the granulated sugar and cinnamon on a plate.
Press the French toast into the mixture, coating both sides evenly.
Step 6: Serve and Enjoy
Slice the French toast in half and watch the melted chocolate ooze out. Serve immediately for the best texture and flavour.

Tips for the Best Stuffed French Toast
- Use Thick Brioche Slices: This helps hold the chocolate without falling apart.
- Don’t Oversoak the Bread: Too much liquid can make it soggy.
- Cook on a low-medium heat: This ensures the bread cooks through without burning.
- Let the Chocolate Rest Inside: Give it a few seconds after cooking to help the chocolate fully melt.

I’ve made that one yesterday but, I don’t have thick slice of brioche bread so I take a normal slices of brioche used my both thumb to make a well in the middle and stuffed It with Nutella on both slices of bread. Then, I brushed the edges with the french toast egg mixture, Sandwiched it, and coated it with the egg mixture, and Air fried it. I topped with powdered sugar and cut in half to revel the gooey Nutella in the centre. They are Soo good!! 😄*
