Why You’ll Love These Air Fryer Blueberry Pancakes

If you love pancakes as much as I do, you’ll absolutely love these air fryer blueberry pancakes. They’re thick, fluffy, and bursting with sweet, juicy blueberries.

Perfect for a cosy weekend morning or whenever you fancy pancakes, these are so easy to make. Plus, the air fryer ensures they’re evenly cooked with minimal effort.

What Makes This Recipe Special?

These pancakes are not only quick and easy to make, but they also use simple ingredients you probably already have at home. The blueberries add a natural sweetness and burst of fruity flavour in every bite.

Plus, this recipe is featured in my latest book, Fitwaffle’s Easy Air Fryer, available now on Amazon. Packed with recipes like this, it’s perfect for making mealtime more fun and exciting!

Equipment You’ll Need

To make these pancakes, you’ll need:

  • Air fryer – For even cooking and perfect golden pancakes. I used a Tower 11L Air Fryer, it’s my favourite Air Fryer.
  • 10cm Round Silicone moulds – To help the pancakes hold their shape.
  • Mixing bowls – To mix up the pancake batter.
  • Balloon whisk – To combine the batter smoothly.

Why Air Fryers Are Perfect for Pancakes

  1. No Sticking: Silicone moulds prevent sticking, and the air fryer ensures even cooking.
  2. Consistent Results: You’ll get evenly golden pancakes every single time.
  3. Less Oil: Only a light spray of oil is needed.

Ingredients for Air Fryer Blueberry Pancakes

For the Pancakes:

  • 80 g full-fat Greek yogurt (5 tbsp)
  • 150 ml semi-skimmed or skimmed milk (⅔ cup)
  • 1 medium egg
  • 15 g salted butter, melted (0.75 oz)
  • 1 tbsp maple syrup
  • 120 g plain flour (scant ¾ cup all-purpose flour)
  • 1 tbsp caster sugar (granulated sugar is also fine)
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • Good pinch of salt
  • 100 g fresh blueberries (3.5 oz)
  • Cooking oil spray (I use olive oil in a spray bottle)

To Serve (Optional):

  • Fresh berries
  • Whipped cream
  • Maple syrup

How to Make Air Fryer Blueberry Pancakes

Step 1: Prepare the Wet Ingredients

In a large mixing bowl, whisk together the Greek yoghurt and milk until smooth. Add the egg, melted butter, and maple syrup, whisking until fully combined.

Step 2: Add the Dry Ingredients

Add the flour, sugar, baking powder, bicarbonate of soda, and salt to the wet mixture. Fold gently until smooth and lump-free. Then, fold in the fresh blueberries. Leave the batter to rest for 15 minutes.

Step 3: Preheat the Air Fryer

After about 10 minutes, set your air fryer to 160˚C (320˚F) while the batter rests.

Step 4: Prepare the Moulds

Spray the silicone moulds with cooking oil, ensuring the base and edges are evenly coated to prevent sticking.

Step 5: Fill the Moulds

Scoop just under half a cup of batter into each mould and smooth it out evenly with a spoon or spatula.

Step 6: Cook the Pancakes

Place the moulds in the air fryer basket and cook for 8–10 minutes, I usually cook mine in two batches 3 at a time. Carefully flip the pancakes out of their moulds and cook for an additional 3–4 minutes until golden brown and cooked through.

Serve the pancakes warm with your favourite toppings. I like to use more blueberries, whipped cream, and maple syrup!

Why This Recipe is Perfect for Any Occasion

These air fryer blueberry pancakes are perfect for breakfast, brunch, or even a lazy dinner, we don’t judge over here. The fluffy texture and sweet blueberries make them an all-time favourite for both kids and adults.

They’re easy enough to whip up on a weekday, and special enough for weekend mornings.

Tips for the Best Pancakes

  1. Don’t Skip the Resting Time: Resting the batter allows the gluten to relax, resulting in fluffier pancakes.
  2. Use Silicone Moulds: These help the pancakes hold their shape and cook evenly in the air fryer.
  3. Spray the Moulds Well: A light coating of oil prevents sticking and ensures easy flipping.
  4. Don’t Overmix the Batter: Fold gently to keep the pancakes light and airy.
  5. Choose the right Blueberries: Fresh blueberries work best, but frozen can be used if thawed and dried first.

Bonus Tip: Customise Your Pancakes

Feel free to switch up the flavours by adding chocolate chips, lemon zest, or even a dash of cinnamon to the batter.

Serving Suggestions

These pancakes are amazing on their own, but here are some fun ways to serve them:

  • With Fresh Fruit: Add a side of sliced bananas or strawberries for extra sweetness.
  • With Whipped Cream: A dollop of cream makes them extra indulgent.
  • With Syrup: Drizzle with maple syrup or honey for a classic finish.
  • The Classic: Sometimes you just can’t beat the classic lemon and sugar.
