Why Use an Air Fryer for This Recipe?
Using an air fryer is a game-changer for recipes like this. It creates perfectly gooey cookies with crisp tops quicker than it takes in a conventional oven. Plus, air fryers are more energy-efficient and ideal for small-batch baking, so you can whip up desserts like this with minimal effort.
This recipe is featured in my latest book, Fitwaffle’s Easy Air Fryer, available now on Amazon. It’s full of delicious recipes you can make effortlessly using your air fryer.
What You’ll Need to Make These Biscoff Cookie Pots
Before you start, ensure you have the following:
- Ramekins: You’ll need 2 ramekins that are air fryer-safe and measure approximately 6cm x 6cm (2½in x 2½in).
- Spoon or spatula: For mixing the ingredients and layering the dough.
Ingredients for Air Fryer Biscoff Stuffed Cookie Pots
For the Cookie Dough:
- 50g unsalted butter, softened (1.75oz)
- 40g light brown sugar (3 tbsp)
- 20g granulated sugar (1 tbsp + 1 tsp)
- 1 egg yolk
- ½ tsp vanilla extract
- 70g plain flour (½ cup all-purpose flour)
- ¼ tsp bicarbonate of soda (baking soda)
- ¼ tsp salt
- 60g chocolate chips + extra for topping (4½ tbsp)
For the Filling:
- 2 tbsp Biscoff spread or your favourite spread
How to Make Air Fryer Biscoff Stuffed Cookie Pots
Step 1: Prepare the Dough
In a small bowl, beat together the softened butter, light brown sugar, and granulated sugar until it forms a smooth paste. Add the egg yolk and vanilla extract and mix until fully combined.
Step 2: Mix the Dry Ingredients
Fold in the plain flour, bicarbonate of soda, and salt until the dough is just combined. Be careful not to overmix. Finally, fold in the chocolate chips for that extra burst of chocolatey goodness.
Step 3: Preheat the Air Fryer
Preheat your air fryer to 160˚C (325˚F) while you assemble the cookie pots.
Step 4: Assemble the Cookie Pots
Divide the dough into two portions. Press three-quarters of each portion into the bottom and sides of the ramekins, leaving a small well in the centre. Add 1 tablespoon of Biscoff spread into the well of each ramekin.
Top with the remaining cookie dough, spreading it evenly over the filling. Sprinkle extra chocolate chips on top for decoration.
Step 5: Bake in the Air Fryer
Place the ramekins in the centre of the air fryer basket and bake for 10–15 minutes, or until the top is golden brown. The exact time may vary depending on your air fryer, so keep an eye on them during the final minutes.
Step 6: Serve and Enjoy

Let the cookie pots stand for 2 minutes after baking to cool slightly (be careful they will be very hot), then grab a spoon and dig in while they’re warm and gooey. Best served fresh, but you can reheat them in the air fryer for 2–3 minutes the next day.
Tips for Perfect Biscoff Stuffed Cookie Pots
- Don’t Overbake: The key to a gooey centre is slightly underbaking. The cookies will continue to cook as they cool in the ramekins.
- Customise the Filling: If you’re not a fan of Biscoff, try Nutella, chocolate spread, pistachio spread, peanut butter, or even a dollop of jam.
- Serve Warm: These cookie pots are best enjoyed warm for that molten, gooey centre.
Why Air Fryer Biscoff Stuffed Cookie Pots Are Perfect
These cookie pots are perfect because they’re easy to make, small-batch, and absolutely delicious. The air fryer ensures they bake evenly, with perfectly crisp edges and soft, gooey centres. They’re also ideal for any occasion, whether you’re enjoying them yourself or serving guests.
